365 Project - Day 144

Twice Baked Potatoes

Ingredients:
Baking Potatoes
Milk
Grated Cheddar Cheese (more than other types)
Grated Parmesan Cheese
Chopped Morbier (or some other interesting cheese)
Bacon

*feel free to try different varieties of cheese that you have or think would be good

Bake or microwave potatoes until they are fork tender. Pre-heat (or raise) oven to 400F. Cut potatoes in half length wise, and let cool so you don't burn your fingers. Scoop out the insides and reserve in a medium sized mixing bowl. Leave enough of the potato attached to the skin that it stays as a shell and will not break when moved. Oil both sizes of the shell and place so that the skin is facing up on a sheet pan. Bake until just browned.

Grill one piece of bacon until crisp (to mix in) and one just under so it will crisp when broiled.

While the shell is cooking, using a fork to mash the potato. Mix milk and seasonings into the potato until incorporated. Add the mix of cheese a little at a time to ensure even incorporation. (Optional: add crisp chopped bacon and / or chives)

Remove shells from oven and turn over so the skin is facing down. Either pipe or spoon filling into the shells and smooth. Return the sheet pan to a 350F oven and bake until hot through. Remove and add bacon to the top of each, and place into the broiler for one minute.
