Apple Pie from Scratch

The apples I used in this post are from the ones I picked in NY State. As for the recipe, well there isn't exactly one, as I did it by taste and memory, but I will do my best to re-create it here. I adapted it from the SmittenKitchen where you can get full instructions as the base of what I made. What all this really means is you can't go wrong, its Apple Pie!

For the Filling:
A mix of 8 tart nicely sized apples
1.5 tablespoon juice and 1 teaspoon zest from 1 lemon
3/4 cups sugar (you can use brown sugar too)
2 tablespoons Flour
1/4 teaspoon Kosher Salt
1 teaspoon Cinnamon
1/3 teaspoon ground Nutmeg
1/4 teaspoon Almond Extract

Night Out: Rupert Deese Exhibition

Two weeks ago, before the storm and loss of power I went to the opening of Rupert's newest solo show at the Nancy Hoffman Gallery in NYC's Chelsea neighborhood. The work as always was great, with some new use of color that I really liked. Someday I will own one of these.

Cooking: Quiche (without electricity)

With the power down and the roads closed all around there's not much else to do but cook by lamp light. So yesterday I made my first Quiche. It had goat cheese on the bottom, with butter sautéed leeks.
